Sweet Zucchini Muffins

 Ingredients

  • 1.5 cup all-purpose flour
  • 1.5 tsp of bi carb soda 
  • pinch of salt 
  • 1/4 cup coconut sugar 
  • 1/3 cup dark choc chips
  • 3/4 cup milk of choice 
  • 1/3 cup natural yoghurt
  • 2 organic eggs
  • half grated zucchini

Method

  1.   Turn the oven onto 180 degrees C
  2.   Prepare your muffin tray with baking spray or muffin cases
  3.   In a bowl, mix flour, sugar and choc chips
  4.   In a jug, mix milk, yoghurt, eggs and zucchini
  5.   Add the jug mix to the bowl and stir gently until just combined
  6.   Bake for 20 minutes or until a skewer comes out clean
  7.   Eat within 3 days or freeze for 3 months

 Substitutes 

  • Make blueberry muffins by adding ½ cup of blueberries 
  • Make double chocolate muffins by adding: 1/3 cup cocoa

 Dairy free 

  • Swap out full cream milk for almond milk 
  • Swap out natural yoghurt for coconut yoghurt
