Sweet Zucchini Muffins





Ingredients
- 1.5 cup all-purpose flour
- 1.5 tsp of bi carb soda
- pinch of salt
- 1/4 cup coconut sugar
- 1/3 cup dark choc chips
- 3/4 cup milk of choice
- 1/3 cup natural yoghurt
- 2 organic eggs
- half grated zucchini
Method
- Turn the oven onto 180 degrees C
- Prepare your muffin tray with baking spray or muffin cases
- In a bowl, mix flour, sugar and choc chips
- In a jug, mix milk, yoghurt, eggs and zucchini
- Add the jug mix to the bowl and stir gently until just combined
- Bake for 20 minutes or until a skewer comes out clean
- Eat within 3 days or freeze for 3 months
Substitutes
- Make blueberry muffins by adding ½ cup of blueberries
- Make double chocolate muffins by adding: 1/3 cup cocoa
Dairy free
- Swap out full cream milk for almond milk
- Swap out natural yoghurt for coconut yoghurt
